These Costa Rica burritos are a favorite in our house and are made with many common ingredients found in Costa Rica and other Latin American countries. As a result, these burritos are an easy and very affordable meal option for any family. Whether you choose the standard flour tortilla, or the gluten-free corn tortilla, your taste buds will thank you for the satisfying flavors. This Costa Rica version of the burrito includes pre-made rice and beans and you can find links to the recipes below.

Tip: For a gluten-free option, use corn tortillas. The corn tortillas are generally smaller and as a result, make it harder to roll them. The photos of the folded burritos are made with gluten-free corn tortillas and are held together with a toothpick.

We like to add a dash or two of hot sauce for a bit of spice. The Mango Hot Sauce from Jalapeno's restaurant in Playa Negra is definitely our favorite!

Ingredients
 ½ cup Rice (precooked)
 ½ cup Beans (precooked)
 4 Tortillas
 ½ cup Refried Beans
 1 tbsp Coconut Oil
 1 cup Cabbage
 2 Tomatoes
 2 Onions
 1 tbsp Sour Cream (optional)
 ½ tbsp Hot Sauce (optional)
 ½ tbsp Lizano Salsa (optional)
Preparation

Chop the onions and tomatoes and set aside.

Slice the cabbage and set aside. We use a banjo/mandolin slicer to create quick, easy, thin slices.

In a medium-size pan, add the coconut oil and heat on medium-high heat (approximately setting 6.5.) until warm.

Add the precooked rice and beans and reheat until warm.

On one half of the tortilla, add a 1/8 cup refried beans and spread.

Add the bean and rice mixture on top of the refried beans (approximately 1/8 cup).

Put a 1/4 of the vegetables (tomato, onion, cabbage) on top of the bean and rice mixture.

Add any sauces and sour cream, if desired.

Fold in the sides and roll the burrito starting with the edge containing the ingredients.

Top with remaining vegetables.

Tip: You can also top it off with hot sauce, Lizano Salsa, and sour cream if desired. We recommend a side of fruit and chips with the burritos.
